Loaded Roasted Cauliflower

1 medium head cauliflower

2 tablespoons avocado oil

Pink Himalayan salt

2 slices bacon chopped

2 green onions sliced

1 Cup shredded sharp cheddar cheese

1. Preheat oven to 400°F. Line a sheet pan with parchment paper. 

2. Core the cauliflower and cut the florets into bite size pieces. Toss the cauliflower with the oil then spread on the line sheet pan and sprinkle lightly with salt. Top the cauliflower evenly with the bacon and green onions.

3.  Bake for 25 minutes then remove from the oven and top with the cheese. Bake for two to four more minutes until the cheese has melted.
