Crab Cakes
10oz Crab Meat
4oz Pork Rinds, crushed
1 Cup Freshly Shredded Mozarella
2 Eggs
1 TBSP Mayo
1 TSP Dill
½ TSP Smoked Paprika
3 TBSP Water
¼ Cup Olive Oil
Pinch of Himalayan Pink Salt
Lemon Glaze
2 TBSP Olive Oil
2 TBSP Lemon Juice
1 TSP Fresh Minced Garlic
1/4 TSP Lemon Zest
Pinch of Himalayan Pink Salt

1. In a large mixing bowl, mix together crab meat, pork rinds, shredded mozzarella, eggs, mayonnaise, and spices thoroughly. Cover and refrigerate for 1 hour.
2. Next, remove from the refrigerator and add the water, then form into 1-1 1/2 inch patties.
3. Then put the olive oil in a non-stick skillet and add the patties, then cook on Medium heat for 5-8 minutes on both sides.
4. Lastly, mix the Lemon Glaze mixture and add to the top of the cakes and serve!
