Chicken:
3 Chicken Breasts
3 Slices of Fresh Mozzarella (Optional)
3 TBSP Fried Onions (Optional)
Cajun Seasoning:
1 TBSP of Olive Oil
3 TSP Garlic Salt
3 TSP Smoke Paprika (can use non-smoked as well)
2 TSP Cayenne Pepper
1 1/2 TSP Salt
1/2 TSP Red Pepper Flakes
1/2 TSP Oregano
1/2 TSP Thyme
1 TSP Fresh Lime Juice
Jalapeño Cream Sauce:
2 oz Plain Greek Yogurt (we use Chobani)
2 TBSP Trader Joe’s Jalapeño Cream Sauce
1 TSP Fresh Minced Garlic
If you don’t have a Trader Joe’s you can achieve this by substituting and pureeing these together:
1/2 Jalapeño diced
3 TBSP Half & Half
1 TSP Onion Powder
1 TSP Garlic Salt
1. Pre-Heat Oven to 350
2. Mix all Cajun Seasoning ingredients in a large bowl and toss the chicken to coat
3. Place in your non-stick oven-safe skillet and place it on the stove. Cook on Medium-High on both sides for 3 minutes to sear in the flavor.
4. Then place in the oven for 24 minutes at 350.
5. While that cooks, mix your Jalapeño Cream Sauce and place it in the fridge to cool while your chicken cooks.
6. Once your chicken is done, pull it out of the oven and place your sliced Mozarella on top then place it back in the oven for 3 minutes to melt.
7. Once the cheese if fully melted, pull out of the oven and top with your Jalapeño Cream Sauce and Fried Onions (optional)
