4 Individual Chicken Breasts
3 Cups crushed Pork Rinds
4 Cloves of Galic, Minced
3 TSP Organic Pink Himalayan Salt
1 Cups Coconut Milk
4 Organic Eggs
3 TSP Organic Black Pepper
2 TSP Seasoning Salt
1/4 Cup Grated Parmesan Cheese (we use Kraft Grated Cheese)
1 Package Zucchini Noodles
1 Jar of Marinara Sauce (homemade- ingredients below)
4 Slices of Provolone or Swiss (based on preference) (optional)
1. Preheat Oven to 350.
2. Mix crushed Pork Rinds, 2 cloves of garlic (minced), Coconut Milk, Organic Eggs, 2 TSP Organic Black Pepper, Seasoning Salt, Grated Parmesan Cheese, 1 1/2 TSP Organic Pink Himalayan Salt in a bowl.
3. Then dip un-frozen chicken breasts into the mix and place in a non-stick skillet and bake for 30 minutes at 350.
4. While that bakes, mix marinara sauce ingredients in a medium Sauce Pan and cook on medium for 8 minutes. Then put it on low and let simmer.
5. Once the chicken is done, put the non-stick skillet on the stovetop and pour marinara sauce over top of the chicken breast (reserve one 1/2 cup of sauce and place aside) and place the OPTIONAL cheese slices on top of each chicken breast. Then place back in the oven for 8 minutes at 350.
6. While that bakes, place the zucchini noodles and reserved marinara sauce in a non-stick skillet and cook on medium for 8 minutes.
7. Then pull the chicken out of the oven and the zucchini noodles mixture off the stovetop and plate accordingly.
